Danico Bar Launches Peru-Inspired Xplorer Menu Series

Danico bar in Paris introduces its fifth Xplorer menu inspired by Peru’s culture. Owner Nico de Soto collaborates with Coco Gaudin to create 12 original cocktails that embody the country’s rich culinary traditions. Featured cocktails include Titicaca, Chicha Morada, Leche de Tigre, and Tupánanchiskama. De Soto also recently launched a pandan liqueur, Kota, in the US.

Danico, a bar based in Paris, has unveiled the fifth edition of its Xplorer menu series, taking inspiration from Peru’s rich culture and heritage. Launched in 2023, the Xplorer series features a new menu every six months, highlighting different regions of the world, such as Japan, which reflects the travels of owner Nico de Soto.

Nico de Soto’s first encounter with Peru occurred in 2007, where he was influenced by the country’s diverse landscapes and rich cultural elements. This experience informed the narrative of the new cocktail menu, which emphasizes the fusion of indigenous traditions, colonial history, and contemporary flavors across Peru’s natural ingredients.

Collaborating with bar manager Coco Gaudin, de Soto has crafted 12 unique cocktails for this menu, including Titicaca, named after a notable Peruvian lake. This cocktail is a blend of Rémy Martin VSOP Cognac, pumpkin seeds, a spice mix, fig leaves, pumpkin, lemon, and grilled sweet potato milk. In addition, Chicha Morada is inspired by a traditional purple corn beverage, incorporating Grey Goose Vodka and rectified apple juice.

Another featured cocktail, Leche de Tigre, combines Citadelle Gin with ceviche distillate, coconut oil, lime, aji amajillo, and coriander. Meanwhile, Tupánanchiskama, reflecting the Quechua phrase meaning “see you soon,” is composed of tonka-infused Bacardí 8 rum, roasted coffee distillate, arroz con leche, chancaca syrup, and egg. Earlier in the month, de Soto also launched his pandan liqueur, Kota, in the US.
